cups broccoli florets

3

cups cauliflower florets

3

medium carrots, sliced

2

tablespoons water

1/4

cup coarsely chopped red onion

1/2

cup roasted red pepper strips

1/2

cup light Caesar salad dressing

PLACE broccoli, cauliflower and carrots in a 3-quart microwave-safe dish. Sprinkle with water. Cover dish with Reynolds Seal-Tight Plastic Wrap, turning back one edge to vent.

MICROWAVE on HIGH until vegetables are crisp-tender, 3 to 4 minutes, stirring after 1 1/2 minutes. Rinse with cold water; drain well. Place in serving bowl.

STIR IN onion, red pepper strips and salad dressing. Cover with plastic wrap. Refrigerate at least 4 hours or overnight. /span
