Baked Peaches

Directions:

Preheat the oven to 190°C/Gas 5.

Mix together the lime juice, nutmeg, sugar, butter and amaretti biscuits or hazelnuts.

Place the peaches, cut side up, in a baking dish lined with foil and divide the sugar mixture between the peach halves. Bring the sides together and pinch to create a sealed package. Bake for about 15 minutes fold the foil back, back for a further 10 minutes until the syrup is bubbling and there are golden-brown flecks on the peaches. Serve warm with vanilla ice cream


Hint: Baste the peaches occasionally with the syrupy juices that come from them while they are cooking

  • BacoFoil® Non-Stick to line a baking dish
  • Juice of 1 lime
  • Pinch of grated nutmeg
  • 2 tablespoons soft brown sugar
  • 25g (1oz) unsalted butter, softened
  • 25g (1oz) crushed Amaretti Biscuits or hazlenuts
  • 4 ripe peaches (yellow or white), halved and stone removed
